Le Pub is the latest licensed premises to be refurbished by Gallagher Hotel Management Group. This came about when the base building owners required occupation of the basement level of 66 King Street, Sydney, to house equipment to accommodate a major base building services upgrade for the 13 storey Heritage Building. Our client, PJ Gallagher, took the opportunity to convert the Irish Tavern into a French bistro/bar, offering affordable but quality food, wine and beers alongside a gaming area.
The transformation began with all traces of former uses and construction being removed to take the building back to a shell, thereby creating a more open and useable space with as much available height as possible.
FDC, along with our client and design partners, produced an understated but elegant pub playing on the French railway station and carriage theme. All surfaces were relined, ceilings removed in the bar and bistro areas and light panels installed, giving the impression of an atrium lit externally during the day and a warm mirrored surface reflecting the ambience of softer evening lighting.
The fitout included a new commercial kitchen complete with all stainless steel equipment, exhaust hoods and refrigeration rooms; along with new keg room, dry store, beer and beverage lines; new male and female toilets; TAB and gaming room and an impressive new long bar area. The bistro and bar patron areas are finished off with flexible, sturdy but comfortable and colourfully upholstered furniture to round off the presentation of a space with chameleon qualities, offering various combinations of open dining, private dining, open bar or nightclub environments.
